Infected cows can produce milk that has a changed composition which can affect human health

Medical News: While many are concerned about the presence of infectious H5N1 virus particles in both pasteurized and raw milk, many are missing a key important point and important question…is the composition of milk being changed as a result of the cows being infected. Besides the standard components in milk, are there any new biological ingredients being passed out by the cows including any miRNAs or peptides etc that can have an effect on human health? The USDA nor any research facility has to date not conducted such studies.
Infected cows can produce milk that has a changed composition which can affect human health
Unknown to many, besides the fats, proteins and sugar in milk, there hundreds of other bioactive compounds and metabolites in milk including somatic cells, enzymes produced by the cows and many peptides that to this very day, we do not even know their effects on human health. (Perhaps deliberately by the Dairy Industry!) https://pubs.acs.org/doi/10.1021/acs.jafc.9b00204
Interestingly, the USDA and even other research agencies have never delved into the details of milk composition especially with regards to the hundreds of metabolites, proteases, peptides, genes and miRNAs found in bovine milk and their effect on humans. Neither has any Medical News outlets or media covered these components of bovine milk and why we should be concerned.
The H5N1 virus is known to disrupt numerous cellular pathways and also cause epigenetic changes involving key proteases, peptide, genes and enzymes including miRNAs. https://www.ncbi.nlm.nih.gov/pmc/articles/PMC4634256/
Hence, it is conceivable that during H5N1 infections, the infected cows could be generating new peptides and miRNAs that could get into the milk and subsequently be passed back to humans.
Hence some of these novel peptides and miRNAs that we know nothing about their long-term effects on human health could find their way into our daily drink and food supplies.
As studies already show that even existing miRNAs in current milk can affect human health, it will be important if urgent studies are conducted to assess if the H5N1 infected cows are currently introducing new bioactive compounds into the milk composition or if there are any changes in the milk compositions and to assess if any of these new compounds can affect human health. https://www.frontiersin.org/journals/genetics/articles/10.3389/fgene.2021.705350/full
